Snowman Truffles


Snowman Truffles are delicious white chocolate-based truffles, decorated to look like friendly snowmen! I've provided some basic decorating suggestions, but feel free to get creative and give your snowmen a fruit leather scarf, chocolate cookie hat, or any other additions you can imagine!

Ingredients
  • 6 oz chopped white chocolate, or white chocolate chips
  • 2.5 oz (5 tbsp) unsalted butter, cubed
  • 3 tbsp heavy cream
  • Pinch salt
  • 1/2-1 tsp peppermint extract, to taste
  • 8 oz white candy coating
  • 1 cup shredded coconut
  • 24 orange Tic-Tacs or other small orange candies
  • 1/2 cup chocolate chips

Preparation
1. Place the chopped white chocolate, cream, butter, and salt in a medium microwave-safe bowl. Microwave in 30 second intervals, whisking well after every 30 seconds, until the mixture is melted and smooth.
2. Add 1/2 tsp peppermint extract, and whisk it in. Taste the mixture, and add more peppermint extract if desired. Press cling wrap over the top of the white chocolate, and refrigerate until it's firm enough to scoop, about 2 hours.
3. Use a 1-inch candy scoop or a teaspoon to form the white chocolate mixture into small balls. Dust your palms with powdered sugar and roll the balls between your palms to make them round. Place the truffles on a baking sheet lined with parchment or waxed paper, and refrigerate the tray for another hour, until they are very firm.
4. Melt the white chocolate candy coating in the microwave, stirring frequently, until it is melted and smooth. Let it cool down until it is still warm and fluid, but not piping hot. Place the shredded coconut in a wide, shallow bowl.
5. Once the truffles are firm, place a spoonful of melted candy coating in the palm of your hand. Drop a truffle into your palm, and roll it around with your other hand until it has a light layer of coating on all sides. Tilt your hand so the truffle rolls down your palm and into the bowl of shredded coconut. Use a fork to toss it in the coconut so it's covered on all sides. (This method is a little different from traditional truffle dipping instructions, but it produces a thinner coating of white chocolate on the outside, and once you get the hang of it, it's faster and easier than traditional dipping techniques.) Place the coconut-covered truffle back on the baking sheet, and repeat until all of the truffles are covered with coconut.

6. Dip an orange candy in the melted white chocolate candy coating, and press it on top of a truffle, in the center. Repeat until all of the truffles have orange noses.
7. Melt the chocolate chips, and place the melted chocolate in a plastic bag with a hole snipped in the corner, or a paper cone. Add two dots for eyes to each truffle, and dots for a mouth below the nose. Refrigerate the tray to set the chocolate dots.
8. Snowman Truffles can be stored in an airtight container in the refrigerator for up to two weeks. Their noses can be delicate, so store them carefully. For the best taste and texture, let them come to room temperature before serving.
